Buttermilk is the drink left after churning cream for butter, and is also made by culturing standardised milk. The milk is heat treated, cooled, inoculated and held while it ferments, then stirred, seasoned with salt or spices where required, chilled and packed.
Complete Butter Milk Process Flow
Milk is received, separated to set the fat level the product is made at, and held chilled in tank.
The standardised milk is heat treated and then cooled down to the temperature at which the culture is added. Heat comes off the boiler circuit through the heat exchanger.
Culture is added and the milk is held warm and still in a jacketed vessel while it acidifies, which is what gives buttermilk its sour character. The hold is run and logged from the control panel.
The set curd is stirred and broken down to a drinkable body, salt, cumin, mint or other seasoning is dosed in where the recipe uses it, and the product is chilled.
Chilled buttermilk is filled into pouches, cups or bottles and sealed.
Packs are coded, checked for leaks, crated and moved out on conveyor to the cold chain.
